Bubbling bubble ‘n’ squeak

You will need:

 

  • 800g (3 cups) left over mash potatoes
  • 300g (half) left over cabbage
  • 2 leeks/ 1 onion/ both
  • 1 egg
  • Butter
  • Salt and pepper

 

If you want to add extra flavour:


•           3 rashers bacon/ 1 cup cooked ham/ both

•           Cheese

 

 

What to do:

 

Bubblin' bubble 'n' squeak

1. Chop up the leeks/ onion.

2. Fry the onion and/ leeks until soft.

3. Fry bacon for five minutes.

4. Mash left over potatoes.

5. Mix together mash potatoes, cabbage, onion/ leek and cut up bacon.

6. Beat the egg and add into mix.

7. Add cheese.

8. Mix well and season with salt, pepper and paprika if you're feeling adventurous!

9. Shape into palm size cakes and grill on each side until brown.

10. If you’re a sauce-oholic, add some ketchup... or for a yum alternative top with a soft-centred poached egg!
