Chunky veggie soup

 

 You will need: 

  • 2 Carrots

  • 1/2 Turnip/Swede

  • 1 Leek (and any other veg you want/have - try parsnip, sweet potato, mushrooms)

  • 1 Onion

  • 1 clove of garlic

  • 1 vegetable stock cube

  • Butter

  • Salt and pepper

     Spag bol

 

 

What to do:

  1. Peel and Dice up veg, as chunky as you want the soup
  2. Heat about 1 tablespoon of butter in a large pan
  3. Add all veg and soften for about 5 minutes, stirring
  4. Add veg stock cube and water to cover the veg by a good inch, stir well
  5. Season with salt and pepper
  6. Bring to boil, reduce heat and simmer for about 45mins until the veg is soft
  7. Blend and return to heat if desired - or just leave chunky
