What to do:
- Peel and Dice up veg, as chunky as you want the soup
- Heat about 1 tablespoon of butter in a large pan
- Add all veg and soften for about 5 minutes, stirring
- Add veg stock cube and water to cover the veg by a good inch, stir well
- Season with salt and pepper
- Bring to boil, reduce heat and simmer for about 45mins until the veg is soft
- Blend and return to heat if desired - or just leave chunky
